Ingredients for the Lazy Enchilada

- Frozen Taquitos: My family loves shredded beef taquitos, but any frozen taquito flavor works!
- Refried Beans: Choose your favorite canned refried beans! Refried black beans are a great alternative. You could also leave out the beans.
- Enchilada Sauce: Use red or green enchilada sauce! I prefer green with chicken taquitos and red with beef.
How to make lazy enchiladas
Dinner couldn’t be easier than this! Just layer them, pour them, sprinkle them on top and pop them in the oven for a quick, cheesy meal the whole family will devour. Make some homemade guacamole and Mexican rice to serve on the side for a complete meal.
- Spread the refried beans: Preheat the oven to 400°F, then spray a 9×13 baking dish with nonstick cooking spray. Spread the refried beans evenly in the prepared baking dish.
- Add Taquitos: Arrange the taquitos in a single layer on top of the layer of beans.
- For the sauce: Pour the enchilada sauce over the taquitos, making sure to cover them completely.
- Cook and melt the cheese: Bake in the oven for 15 minutes, then remove and garnish with grated cheese. Return the pan to the oven and cook for another 5 minutes or until the cheese is melted. Serve lazy enchiladas with toppings of your choice.

Refried Beans: Stir the canned beans to soften them. For easier spreading, microwave for about 20 seconds, then stir until smooth and spread into the baking dish.

- 1 (16 ounces) can refried beans
- 1 (10 ounces) can enchilada sauce red or green
- 1 ½ cups grated Mexican mixed cheese

Instructions

Preheat oven to 400°F and spray a 13 X 9 X 2-inch baking dish with nonstick cooking spray.

Diffusion 1 (16-ounce) can refried beans evenly over the bottom of the prepared baking dish.

Organize 20 frozen taquitos in a single layer on top of the bean layer.

Deposit 1 can (10 ounces) enchilada sauce over the taquitos, making sure to cover them completely.

Bake in the oven for 15 minutes. Remove from oven and top with 1 ½ cups shredded Mexican blend cheese.

Cook for an additional 5 minutes or until the cheese is melted. Complete with yours favorite condiments and have fun!
Notes
- Fridge: Once cooled, store in the refrigerator in an airtight container for 3-5 days.
- Heat: Reheat in oven at 350ºF until heated through.
